Shepherd’s Breakfast – ONE POT MEAL + CARNIFEX

Now that it’s officially October I find myself craving those warm, comforting meals that are perfect for a cold fall or winter day. This Shepherd’s Breakfast is a recipe you need in your arsenal for when those days hit. With only 5 simple ingredients, this is a recipe that anyone could make. And trust me when I say it’s one the bacon lovers in your life will be asking you to make over and over again.

After editing my first video version of this Dinner & A Vinyl series on my YouTube channel, I couldn’t wait to bring you another NEW recipe along with a video step by step. While this is a recipe that my dad taught me how to make when I was about 18, my decision to share it with you for this series quite literally stemmed from my favorite, spooky time of year.

Over the last few weeks, we’ve really started to experience those fall temperatures here on the East Coast. Needless to say, VV’s full spooky mode was initiated at that point. And I’ve been surrounding myself with halloween movies, spooky music (like my Heavy Halloween playlist), and of course, food that just screams fall.

There are of course some bands I have on a constant rotation during the Halloween season, and Carnifex is one of them. And much like Carnifex, this heavy dish brings just the right amount of heat. So when I found myself craving the brutal, spooky sounds of Carnifex’s Graveside Confessions recently, I couldn’t help but pair it with my Shepherd’s Breakfast recipe for the ultimate cooking and eating experience!

What Makes Shepherd’s Breakfast So Easy To Make?

Shepherd’s Breakfast only consists of 5 ingredients: bacon, smoked sausage, fresh banana peppers, canned tomatoes, and sliced mushrooms. There’s no measuring, no seasonings, oils, etc. Just those ingredients- which are very easy to cook might I add. It’s worth noting that this dish does take some time to make and that’s for two reasons. First, the ingredients will cook in a specific order and then come together at the end. This ensures even cooking for all of the ingredients. And secondly, just before it’s ready, you’ll want to let this sit and stew so all the flavors can meld even more together.

How To Store The Leftovers

Leftovers with an airtight lid will keep for 3-4 days in a container in the fridge.

Shepherd’s Breakfast – ONE POT MEAL + CARNIFEX

Description

This easy, bacon lover’s one pot meal consists of just 5 simple ingredients for a warm and satisfying meal.


Ingredients

Scale
  • 1 lb bacon
  • 1 smoked sausage rope, sliced into rounds
  • 214.5 oz cans of diced tomatoes
  • 25 oz packs of sliced white mushrooms
  • 56 banana peppers, seeds removed and chopped

Instructions

  • Heat a large non stick skillet or cast iron dutch oven over medium heat
  • Once hot, add the sausage, making sure to not crowd the pan. Brown the sausage on both sides and move to separate plate. Set aside.
  • Then add the bacon, cooking evenly on both sides. Move the bacon to the plate, and remove the skillet/dutch oven from the heat. DO NOT THROW OUT THE BACON GREASE. This will create a broth in the next step.
  • Once the leftover oil from the bacon has cooled, add your mushrooms, peppers, and tomatoes. Give it a stir and turn the heat up to medium. Cover and let cook for 5-10 until the veggies have softened, stirring every so often. In the meantime, break the cooked bacon into small pieces.
  • Then add your cooked bacon and sausage to the pot with the veggie broth. Cover and let cook for another 10 minutes, give it another stir, cover and cook again for another 5-10 minutes.
  • Serve immediately or remove from heat and let sit from an additional 10 minutes to allow the flavors to continue to meld.
