There’s a lot of things I love about nachos. But if I were to pick just one thing that sets them apart, it’s that there’s SO much you can do with them. Whether it’s with the toppings or how you’re serving them, nachos can be a crowd pleasing meal for anytime of the day- even dessert! My favorite variation though, are my Sheet Pan Bell Pepper Nachos. They’re easy, super flavorful, and the leftovers last way better than traditional nachos. So say hello to your new favorite weeknight recipe too, because these make a great next-day lunch.

This Month’s Dinner & A Vinyl Music Selection: Rob Zombie’s The Lunar Injection Kool Aid Eclipse Conspiracy

Rob Zombie’s music is always filled with a lot of layers, another thing it has in common with Nachos as a whole. Both are fun and something anyone can enjoy, in part due to their ability to play with a variety of different mixtures: food wise and musically speaking. These Sheet Pan Bell Pepper Nachos also have just enough spice to them, much like Rob Zombie’s music. When it came to pairing this easy recipe with one of his albums though, it had to be The Lunar Injection Kool Aid Eclipse Conspiracy.

This album specifically is one of Rob Zombie’s most versatile yet with some heavy doom, electronic elements, and even a country song being mixed in. Thus, making The Lunar Injection Kool Aid Eclipse Conspiracy much more than your standard Rob Zombie album. From songs like “Crow Killer Blues” that sound like they should blasting from an arena for the encore of a show, to the fun stoner track, “Shake Your Ass Smoke Your Grass”, this album is a crowd pleaser bringing something to the table for everyone.

Why Use Bell Peppers Instead of Tortilla Chips?

I initially started making these Sheet Pan Bell Pepper Nachos as a lighter calorie option to traditional nachos (since Bell Peppers have significantly less calories than chips). But I instantly preferred this method after the first time making it, because the bell peppers actually keep some stability to the nachos, instead of them turning into a soggy mess. The leftovers also hold up, so this is also one of my favorite things to pack for a work lunch. All you need is a microwave to reheat them.

Sheet Pan Bell Pepper Nachos & Rob Zombie [D&V]

Description

Meet my Sheet Pan Bell Pepper Nachos. They’re easy, super flavorful, and the leftovers last way better than traditional nachos. So say hello to your new favorite weeknight recipe too, because these make a great next-day lunch.


Ingredients

Scale
  • Olive Oil Spray
  • 56 Bell Peppers (any color)
  • salt
  • fresh ground black pepper
  • 2 tablespoons of olive oil
  • 3 jalapeños, seeded and diced
  • 1/2 cup onion, diced
  • 1/2 cup red bell pepper, seeded and diced.
  • 1lb ground beef or ground chuck
  • 1.5 oz taco seasoning (about a pack and a half)
  • 1/3 grape tomatoes, halved and quartered
  • 2 cups of shredded cheddar cheese (or 1 cup cheddar and 1 cup Monterey Jack)

Instructions

  1. Preheat oven to 425

  2. Grease sheet pan with olive oil spray and cut five-6 bell peppers onto “chips” or wedges that are flat or scoopable, but large enough to hold mixture.

  3. Sprinkle peppers on tray with salt and fresh ground pepper.

  4. Heat 2 tablespoons of olive oil in a skillet over medium-medium high heat until the oil is shimmering but not smoking. Add the peppers and onions and cook for 5-8 minutes until soft and starting to brown

  5. Add beef and continue cooking until cooked through. When almost cooked add 1.5 oz of taco seasoning. (About a pack and a half)

  6. Layer nachos with 1 cup cheddar cheese, and then the meat/veggie mixture. Top it off with tomatoes and 1 more cup of cheese.

  7. Bake for 10-15 minutes or until cheese is melted and peppers have softened
