The Story Behind This Vegetarian Sheet Pan Breakfast Sandwich

I love to cook, but I hate having tons of dishes. My husband and I split the household duties and fortunately for me, he’s the dish king. However, that doesn’t mean I like having a ton of clean up after cooking even if we split it 50/50. Not to mention that after a year of what feels like nonstop cooking and cleaning because of Covid, I’m all about recipes that require minimal effort. That’s exactly how this vegetarian sheet pan breakfast sandwich was born.

My go-to for an easy meal that I can throw together in minutes is always pizza. But after looking for ways to cut back on my dairy consumption, I turned to my 2nd go-to which is eggs. They take a short amount of time to cook, and just like pizza, you can make them in a variety of different ways. The flavor of eggs though can be boring, especially if you’re just having eggs and toast. Determined to come up with an on-the-go recipe that still has a ton of flavor, I decided to do the unthinkable and pair pesto with eggs.

I realize pesto and eggs isn’t a “new” concept, but I definitely wasn’t sure how I’d feel about it. If you haven’t had this combination before, you’re probably questioning it like I was. Once I tasted it though, there was no looking back. Although, I did look back at all those times I chose to have eggs without pesto because I regret not trying this sooner.

But Virgo, Why THIS vegetarian breakfast sandwich AND Tetrarch’s Unstable?

Because, not only are both of these a great way to start your day, but they will also give you the fuel to keep going. The vegetarian sheet pan breakfast sandwich does this in the literal sense with its healthy ingredients. Tetrarch’s Unstable, however, does this by giving you the soundtrack to kick any day’s ass.

What You Should Know About Tetrarch’s Unstable

As I get older, I love seeing the things that were big back in my day make a comeback. With many Y2K trends on the upswing, it’s not surprising that there’s been a lot of talk about the return of nu metal. Tetrarch’s Unstable confirms nu metal is definitely back, and with a vengeance.

But if you’re a metalhead that’s not a fan of nu metal, don’t let stop you from listening to this record. Tetrarch’s heavy metal influences are just as apparent as their nu metal influences. The one that stands out the most though is the early 2000’s Slipknot vibe that is especially apparent on songs like “Negative Noise”. It’s a sound that I know many fans prefer, and it’s refreshing to hear from such a young band.

I was already a big fan of the band’s first album, Freak. But this album blows their first effort out of the water. On Unstable, the band’s efforts to take things a step further are successful as their more refined sound really shines. Tetrarch is like a well oiled machine here. The riffs are smooth and heavy, with solos that soar on tracks like “Sick Of You” while the drums explode with energy.

Josh Fore’s vocals also reach new heights, along with his best deep growls. Unstable proves Fore is a powerhouse in his own right, both instrumentally and vocally. Whether he’s singing emotionally driven songs like “Trust Me” or screaming his lungs out, he nails it.

Tetrarch expertly blends those extremely heavy elements with melodic moments throughout the album. My favorite example of this is “Take A Look Inside”. Overall, the band is at their best on Unstable. You know the saying leave it all on the field? That’s exactly what Tetrarch does with this album.

How To Make This Vegetarian Sheet Pan Breakfast Sandwich

This recipe will make 3 sandwiches, but you can certainly make more at once if they will fit on your sheet pan. If you are not a fan of red bell pepper, you could substitute for another color pepper. I wouldn’t totally omit them from this recipe though, since they’re a key component in what keeps the eggs from sliding all over the place. Just keep in mind they may still slide slightly. I also recommend keeping your peppers and eggs towards the back of the pan to help avoid this.

Sheet Pan Set Up

Cooking time in this recipe really depends on how you like your eggs. In this recipe they’ll cook for a total of 10 minutes so the yolk will still be slightly runny, similar to an over medium fried egg. You can adjust the cooking time to your desired level of doneness, but I wouldn’t put the English muffin in for more than 5 minutes.

The type of tomatoes used in this recipe is entirely up to you. I used a larger Roma tomato in the photos shown here, but any should work including stem and hydroponic tomatoes. The same goes for the pesto. In the words of my favorite meme, store bought is fine!

Vegetarian Sheet Pan Breakfast Sandwich Recipe

Finished Sheet Pan

Makes 3 sandwiches

Ingredients

  • 1 tomato, such as Roma or Stem Tomatoes
  • 1 red bell pepper
  • 3 eggs
  • 3 multigrain English muffins
  • 1 jar of pesto
  • olive oil
  • salt
  • fresh ground black pepper

Directions

  1. Preheat the oven to 350 degrees.
  2. Slice the tomato and cut the red bell pepper into rings. In a small bowl, lightly drizzle olive oil over the tomato slices and pepper rings. Sprinkle them with salt and pepper.
  3. On a nonstick sheet pan, place the bell pepper rings in a row towards the back of the pan. In the next row, add the tomato slices.
  4. Crack each egg into the center of the bell pepper rings and bake for 5 minutes.
  5. Split the English muffins. Add both the tops and bottoms to the sheet pan. Bake for another 5 minutes, or until the whites are set.
  6. Remove from the oven and spread pesto on each inner side of the English muffin. Sprinkle the eggs with salt and pepper if desired.
  7. Assemble starting with the bottom of the English muffin, tomato slice, egg/pepper, and finish with the top of the English muffin.
