Description
This easy, bacon lover’s one pot meal consists of just 5 simple ingredients for a warm and satisfying meal.

- 1 lb bacon
- 1 smoked sausage rope, sliced into rounds
- 2– 14.5 oz cans of diced tomatoes
- 2– 5 oz packs of sliced white mushrooms
- 5–6 banana peppers, seeds removed and chopped
Instructions
- Heat a large non stick skillet or cast iron dutch oven over medium heat
- Once hot, add the sausage, making sure to not crowd the pan. Brown the sausage on both sides and move to separate plate. Set aside.
- Then add the bacon, cooking evenly on both sides. Move the bacon to the plate, and remove the skillet/dutch oven from the heat. DO NOT THROW OUT THE BACON GREASE. This will create a broth in the next step.
- Once the leftover oil from the bacon has cooled, add your mushrooms, peppers, and tomatoes. Give it a stir and turn the heat up to medium. Cover and let cook for 5-10 until the veggies have softened, stirring every so often. In the meantime, break the cooked bacon into small pieces.
- Then add your cooked bacon and sausage to the pot with the veggie broth. Cover and let cook for another 10 minutes, give it another stir, cover and cook again for another 5-10 minutes.
- Serve immediately or remove from heat and let sit from an additional 10 minutes to allow the flavors to continue to meld.
